Blueberry Oatmeal


Oatmeal is an inexpensive food that is rich in lignans, a heart protective plant chemical that protects against cardiovascular diseases. Lignans can be found in other foods, like flax seeds, broccoli and apricots. Eating oatmeal may reduce your risk of cancer and can help lower cholesterol. Besides this it also is a delicious meal that keeps you fuller than some other breakfast foods. Here is my delicious Blueberry oatmeal recipe I can’t be without.

1 cup rolled oats

2 cups of water (or 1 cup water – 1 cup almond milk)

Dash of salt

1 tsp. ground cinnamon

1 tsp. Vanilla

½ cup Blueberries

1-2 tbsp. honey (Depends how sweet you want your oatmeal to taste)

If you are one who likes your oatmeal  bit finer and not chunky then you can place the cup of rolled oats into a processor for a second until it’s a bit chopped.  Do not make it so fine because it becomes like a paste when you cool it.  I like mine chunky so I skip this process. However you can buy the oatmeal in larger flakes or in finer form at the health food store.

Place rolled oats, water, and dash of salt, cinnamon and vanilla into a pan and bring to a boil. Reduce heat and cook for 3 minutes. Make sure you are do not leave it unattended and stir constantly.  Add honey and blueberries stir for 1 minute. Add to bowls, top with a few blueberries, more honey if you like it sweeter and enjoy.

You can add any fruit you like. Strawberries, bananas, peaches, there are endless possibilities with oatmeal.

Hint: If blueberries are frozen you can toss them in early while cooking or let it sit a little longer then a minute – they do thaw quickly.
