Mean lean blueberry salad

Spring has arrived, the air is cool, the flowers are blooming, the skies are sunny and our tummies need slimming. What better way than to start with a cool spring salad with lots of healthy ingredients that will help you reduce inflammation and help your body reverse the symptoms of autoimmune.  This spring salad is my go to when I want something refreshing to eat.


Cut up Romaine lettuce (depends on how many you want to feed) Cut in shreds.

1/4 of a Cucumbers (diced)

1/2 of an Oranges (sliced)

1/2 cup Shredded Red Cabbage

1/2 cup Frozen Fresh Blueberry

1 Tbsp. Sunflower seeds

Sprinkle of Flaxseeds or chia seeds

Gather all the ingredients, wash, cut, drain of water and place it in a bowl. Mix it all up together and leave a few blueberries for the top.

Top it with our Blueberry Vinaigrette.


3/4 cup Olive Oil

2 Tbsp. Balsamic Vinegar

2 Tbsp. White Vinegar

2 Tbsp. Honey

1/2 cup Blueberries

Toss all the ingredients for the vinaigrette in a food processor and process until mixed well.  Pour over this salad and enjoy this refreshing spring salad.
