PIPIN HOT CELERY SOUP
There is nothing like a nice bowl of soup on a cold winter day and if you’re like me, you can drink soup year long. Soup is one of the easiest meals to make and in so many varieties using all kinds of vegetables. Eating your vegetables in soups is one of the best ways to get the nutrient your body needs so long as you use healthy ingredients.
When you find yourself having trouble digesting foods or if you have any autoimmune disorders and you just don’t know what to cook, making a bowl of soup can be your answer for a healthy meal. I stay away from nightshade vegetables that will trigger autoimmune symptoms and I try to focus more on those that will help the inflammation in my body.
Celery is known to be good for your liver, fight inflammation and helps lower your high blood pressure. Not only that celery is just a good tasting vegetables that’s so easy to eat. I hope you enjoy this delicious Pipin Hot Celery Soup
1 Tbsp. Olive Oil
1-2 gloves of garlic
1-2 chopped green onions
2-3 stalks of chopped celery
A Sprig of Fresh Basil
Ground Peppercorn and Himalayan Pink salt to taste.
5 cups of low sodium organic liquid chicken broth
In a saucepan, sauté 1 or 2 gloves of garlic, chopped green onions and chopped celery in 1 tbsp. olive oil until you see the garlic turn a light brown.
Pour organic chicken broth over top, add the basil, then the peppercorn and himalayan pink salt to your taste if needed. Everyone’s taste buds are different, what is salty to me might not be for you, so add little salt at a time until you get the desired taste. Bring to a boil and then lower heat to simmer 10 -15 minutes.
