Quinoa Tuna Salad
I have to say this is my all time favorite recipe. I use to eat it all the time with regular noodles until I realized that each time I did eat it, my belly would feel bloated and I felt sick. I never understood why because I thought I was eating healthy, then one day I realized it was the gluten in the regular noodles.
Now that I have found the Ancient Harvest Gluten Free Quinoa Pasta I have gone back to making this simple recipe and enjoying it even more. Quinoa does take time getting use to the taste, but if made properly and with the right combination of ingredients, it taste delicious.
This recipe is so simple to prepare and refreshing to eat on a hot summer day. It’s also a great dish to prepare the night before to take to luncheons or picnic.
1 – 8oz. Box of Ancient Harvest Gluten Free Quinoa Pasta. Follow the boiling instruction on the box. This Pasta cooks fast so make sure you watch it and don’t over cook it. Drain and set aside to cool.
1/4 Cup of diced celery
1/2 Cup of sliced Red Grape
1/4 Cup of diced or sliced Carrot
1 Tbsp. diced onions – if you like onions you can add more
2 Tbsp. Gluten free Mayo or Miracle Whip – I have used yogurt as well.
1 Can of Tuna – Drained
Dash of Salt and Pepper
Once the Quinoa Pasta has cooled, break them apart and toss it into a large bowl.
Then toss in all the ingredients including the Mayo and Tuna.
Mix it well and add in a dash of salt and dash of pepper. You can add more salt or pepper as you mix it until you get the right taste you desire.
This dish is good chilled, but can also be eaten right away.
When you serve it, top it with sliced almonds, Craisens and Chia seeds.
