Quick and easy spinach and cheese egg muffins

Egg Muffin

I am about making quick and easy meals and this recipe you can make in as little as 30 minutes from start to finish. It makes a great breakfast or midday snack for the kids.

Ingredients needed:

6 Eggs

2 Tbsp. Milk ( I use almond milk, but can use any kind)

Himalayan pink salt and Pepper to taste

Chopped ham or bacon

Chopped spinach, zucchini or any favorite veggie

Grated mild cheddar cheese

Preheat over to 375 F,  grease muffin tin pan

Beat 6 eggs with milk, salt and pepper.

In the muffin tin you can add any combination you would like.

Bacon or Ham with cheese. Spinach and cheese. Ham, spinach and cheese. Zucchini, bacon and cheese. Get my drift.

Once you added the meat or veggie of choice, pour the egg mixture over top of the meat and veggie combo and fill it a little over half way.

Place it in the oven and bake it for 20 minutes or until light brown.

Remove, serve and enjoy.

Tip: You do not need to use salt if you use bacon or ham. These meats are normally salty and gives them that added salt flavor you like.
