Cooking for one does not have to be that difficult matter a fact it’s much easier cooking for yourself, than cooking for a family with picky eaters.
I am a fan of Salmon and instead of buying a slab of Salmon that tends to go bad because you don’t eat it all, it’s best to get the individually wrapped center cut frozen Salmon. The brand I use is the Atlantic Salmon which is perfect to pull out one, thaw it out and cook it with any seasoning desired.
Here is a simple delicious recipe that I whipped up in minutes. I put the rice to cook first since it takes the longest, then the Salmon. The zucchini is real quick to cook so I cook it right before serving.
1 center cut Salmon, thawed
Place it on a piece of foil or baking dish. You can use a toaster oven or regular oven either way will work fine.
Mix: 1 Tbsp. of Olive oil or 1 tbsp melted butter, a sprinkle of salt and pepper, squeeze a little lemon juice, mix it well and pour it over top of the Salmon.
Bake it for about 20-30 minute at 350 degrees preheated over. Salmon does not take long to cook check it to make sure it is done in the middle if not leave it in a little longer until done.
Salmon is a great source of vitamins and omega 3’s fatty acids and protein.
Use a spiraler to spiral a whole zucchini. In a pan heat up 1/4 cup of chicken broth, add the zucchini, a sprinkle of salt and pepper to taste. Cover and zimmer for 5-10 minutes. Mix it well, drain and serve.
Cook black rice in a rice cooker – it is easier and faster.
1/2 cup of black rice, add 1/2 water 1/2 chicken broth until you get to the 1 fill line in your rice cooker. Sprinkle a little salt and pepper to taste. Let it cook until cooker turns off. I like a rice cooker because you don’t have to babysit the rice, cooking on a stove you do.
Half a cup of black rice yields quite a bit, it’s enough for 3 meals. I like cooking extra to have for the week. It’s the healthiest rice you can ever eat.
Black rice has high levels of antioxidant and also has wonderful health benefits. It’s a good source of important fiber, substantial mineral content including iron and copper, and even a good source of plant based protein.
It’s naturally gluten free, good for the heart, good source of fiber, improves digestion, detoxifies the body and most of all it’s good for the memory. You really can not go wrong with eating black rice.
This should take no more then 30-45 minutes to make. While the rice and Salmon are cooking you can be spiraling the zucchini and have it ready to cook right before the rice and salmon is done. It’s a simple recipe and very healthy to eat.
