Simple Spinach Mushroom Shrimp Dinner

Spinach Shrimp

Have you ever just craved a simple healthy shrimp dinner ?  When I hear the word shrimp my mouth just starts to water. Actually I prefer seafood over red meat and chicken any day.

Here is a quick and easy Spinach Mushroom Shrimp dinner that will make your mouth water.  It’s so easy to make that you’ll want to make it often.

Ingredients:

2 Tbsp. Olive Oil

2 Garlic Glove – Peeled, smashed and diced

1 cup fresh mushroom or 1 small can of mushrooms

8-10 pieces of jumbo shrimp

1/4 cup liquid chicken or vegetable broth (I use a vegetable broth and mix it with water)

2 handfuls of spinach

Himalyan Pink Salt and pepper to taste

This whole process goes pretty quick so make sure you have all your ingredients ready to toss in as you along.

In a frying pan place the olive oil and garlic, sauté on medium heat until the garlic turns a little brown, not burn’t. You need to stir it consistently until it browns. If you leave it sit, it will burn quickly.

If using fresh mushrooms and raw shrimp:  Add it in next all together and continue to stir fry until the shrimp turns pink and the mushrooms are browned, add the chicken broth, stir, reduce heat to low cover and simmer for 5-10 minutes. 

Next toss the spinach in, add the salt and pepper to taste at your liking, stir it all together and cover it.  Let it simmer for 10 minutes on low heat until the spinach cooks.

Serve over a bed of Quinoa, Black-White-Yellow Rice, or noodles. If you are gluten free pass on the noodles. I get inflammation eating white and yellow rice so I substitute it for Black Rice, Quinoa or spiral zucchini.    

Tip: If you are using canned mushroom then cook the raw shrimp first then add the mushrooms. If using fresh mushrooms and ready cooked shrimp, cook the mushrooms first, then add the shrimp.  Sorry don’t mean to confuse you..  One just takes a little longer to cook than the other.
